    Theaji amarillo(Spanish for "yellow chili") offers a complex and vibrant flavor profile that is simultaneously fruity, sweet, and moderately spicy, with notes of tropical fruits like mango, passion fruit, and a subtle raisiny finish.Originating in theAndes Mountainsof Peru, where it has been cultivated for thousands of years and is considered a foundational ingredient in the nation's cuisine, this pepper is a member of theCapsicum baccatumspecies and develops a bright orange hue when fully ripe. With a heat range of 30,000 to 50,000 Scoville Heat Units (SHU), comparable to a cayenne pepper, its primary use is in traditional Peruvian dishes such asceviche,aji de gallina(chicken stew),causa rellena(layered potato salad), andpapa a la huancaína(potatoes in a creamy cheese sauce). It is widely available and used in fresh, dried, or paste form to add depth, color, and heat to a variety of salsas, soups, stews, and marinades, and can even be incorporated into modern fusion dishes like risottos or spicy desserts.

    Theaji limopepper offers a distinctive flavor profile known for its intense, immediate heat and a bright, complex blend of floral, fruity notes with a prominent sour citrus tang, similar to lemons or limes. Originating on the western slopes of theAndes Mountainsin Peru, where it has been a staple in local cuisine for centuries and is named after the capital city, Lima, it is prized for its high heat level, typically ranging from 30,000 to 50,000 Scoville Heat Units (SHU). Due to its unique citrusy heat, the aji limo is a vital ingredient in traditional Peruvian dishes, most notably incevicheandtiradito, where it enhances the freshness of seafood. It is also widely used in salsas, hot sauces, marinades for chicken and fish, and can be incorporated into soups, stews, and stir-fries, and is available in fresh, dried, or paste form.

    The rocoto pepper provides a complex flavor profile that is sweet and fruity with subtle grassy undertones, which then gives way to an intense, lingering heat ranging from 30,000 to 100,000 Scoville Heat Units (SHU).Originating in the high altitudes of theAndes Mountainsin Peru and Bolivia, where it has been cultivated for over 5,000 years, the rocoto is unique among peppers for its thick, juicy, apple-like appearance and distinctive, edible black seeds. Due to its substantial, thick flesh, it is challenging to dry and is thus primarily used fresh or as a paste in traditional Peruvian and Bolivian cuisines for iconic dishes likerocoto relleno(stuffed peppers), salsas, hot sauces, stews, and ceviche.
